Grilled Lemon Chicken

Ingredients:
4 boneless skinless chicken breasts
2 tbsp olive oil
¾ tsp salt
½ tsp dried oregano
Fresh cracked pepper

For the dressing:
1/3 C olive oil
¼ C fresh squeezed lemon juice
½ tsp dried oregano
½ tsp salt

Method:
• Coat the chicken on both sides with the olive oil and season with salt, oregano and pepper.
• Place the chicken directly on the grill and grill for 8 to 12 minutes, or until the chicken is firm to the touch and opaque all the way through.
• Remove chicken from the grill, cover with foil and set aside to rest for 5 minutes.
• Meanwhile whisk the dressing ingredients together.
• Use a sharp knife to cut the chicken into slices. Drizzle the dressing over the chicken and serve immediately.

Makes 4 servings; count each as 3 proteins.
