Baked Parmesan Chicken and Veggies

Chicken ingredients:
1 lb skinless, boneless chicken breasts cut lengthwise into thin strips
2 egg whites, lightly beaten
1/3 cup finely grated parmesan cheese
1/3 cup bread crumbs
½ tsp freshly ground pepper
1 tbsp dried basil
1 tbsp dried oregano

Veggie ingredients:
2 tsp olive oil
½ lb container of halved button mushrooms
½ lb container of halved cherry tomatoes
2 cups sliced green beans
Method:

? Place one oven rack on top and one at bottom of oven and pre-heat to 425 F.
? Combine the cheese, breadcrumbs, pepper and herbs in one bowl, and place egg whites in another. Dip each chicken strip into egg and then cheese mixture. Place on a baking sheet and bake on top rack for 20 – 25 minutes, until chicken is cooked through.
? Meanwhile, in a baking dish, stir together olive oil, mushrooms, tomatoes and beans. Set on bottom rack and bake for remaining cooking time for chicken, about 15 to 20 minutes.
? Remove both dishes from oven. Divide chicken strips among 4 serving plates, spoon vegetables alongside and add a lemon wedge to each for squeezing onto the chicken.

Count as 3 proteins, ½ carbohydrate and ½ fat per serving.
