Pizza Pork Chops

Ingredients:
6 oz mozzarella cheese
4 pork chops (1 inch thick with pocket)
1 tbsp vegetable oil
3 medium tomatoes, chopped
1 ½ C sliced mushrooms
1 medium onion, chopped
1 clove garlic, minced
1 tbsp olive oil
1 tsp dried basil
½ tsp dried oregano
¼ tsp pepper
Optional additions: 1 sliced zucchini and ½ green pepper, sliced.
Method:
• Grate half the cheese; set aside.
• Slice remaining cheese into four thick slices. Place one slice in each pork chop pocket; secure with half a toothpick (this makes it easier to brown).
• Brown chops on each side in oil in large skillet. Remove to baking dish.
• In the same skillet cook tomatoes, mushrooms, onion, garlic, oil, basil, oregano, salt and pepper until thickened and vegetables are tender; pour over pork chops.
• Bake, covered, in 350F oven for about 1 hour or until juices run clear when pork is pierced and just a hint of pink remains inside.
• Remove toothpicks. Sprinkle with shredded mozzarella.
Makes 4 servings; count each as 4 protein.
