Shrimp Dinner Salad
A delicious summery recipe, courtesy of the Ottawa Citizen.
Ingredients:
½ C tomato juice
1 tbsp freshly squeezed lemon juice
2 tsp Worcestershire sauce
Several drops Tabasco sauce
Fine sea salt
1 or 2 red bell peppers, trimmed, seeded and diced
2 celery ribs, sliced
1 ½ pounds cooked large shrimp, peeled and deveined
½ C minced fresh chives or cilantro
Lettuce leaves
Method:
• In a large bowl, whisk tomato juice, lemon juice, Worcestershire sauce, Tabasco and salt; taste for seasoning and adjust as needed.
• Stir in peppers and celery.
• Cover and refrigerate for at least one hour for flavours to develop.
• Just before serving, add shrimp and toss to coat.
• Add chives or cilantro and toss to blend.
• Line 4 plates with lettuce and mound shrimp salad on top.
Makes 4 servings; count each serving as 3 protein.
