Mushroom "Bruschetta" Chicken Skillet
This is an easy & delicious recipe - adapted from www.kraftcanada.ca
Ingredients:
1 lb mixed fresh mushrooms (white button, shiitake, cremini), coarsely chopped
1 onion, finely chopped
¼ cup balsamic vinaigrette dressing
1 clove garlic, minced
1 tsp chopped fresh thyme
4 small boneless skinless chicken breasts
½ cup light shredded cheese
1 tbsp coarsely chopped fresh chives or green onions
Method:
1. Cook mushrooms and onions in a large nonstick skillet on medium-high heat for 10 minutes, stirring occasionally.
2. Add dressing, garlic and thyme; cook for 5 – 7 minutes or until the mushrooms are tender, stirring frequently. Transfer to bowl and cover to keep warm. Add chicken to skillet, cook for 5 minutes on each side or until done.
3. Top the chicken with mushrooms and cheese, and cover. Cook 2 to 4 minutes or until cheese is melted, sprinkle with the chives or green onions.
