Pork Tenderloin Stir-Fry with Asparagus and Green Onions

Recipe adapted from Homemakers

Ingredients:
375g pork tenderloin, trimmed
4 tsp cornstarch
1 tbsp soy sauce
1 tbsp Chinese rice wine, dry sherry or sake
1 tsp finely grated fresh ginger
Pinch white pepper
1 bunch asparagus, trimmed and cut in 2-inch lengths
2 tbsp vegetable oil
1 bunch green onions, cut in 2-inch lengths
¼ tsp salt
¼ cup chicken stock, pork stock or water

Method:
Slice pork lengthwise into 3 equal pieces. Between sheets of waxed paper, pound each piece to flatten; cut on diagonal into strips. Mix pork with cornstarch, soy sauce, wine, 1 tbsp water, ginger and pepper. Let stand for 10 minutes.
Meanwhile, blanch asparagus until tender-crisp. Chill under cold water; drain well.
In wok, heat oil over high heat until hazing over top. Stir-fry pork mixture until golden brown, 1 to 2 minutes. Drain through sieve over heat-proof bowl.
Add 1 tbsp of the oil to wok. Add asparagus, onions and salt; stir-fry until onions are tender, about 1 minute. Add pork; stir-fry for 30 seconds. Stir in stock; stir-fry until sauce clings to ingredients, 30 to 60 seconds.
Makes 4 servings. Count each serving as 3 protein and 1 fat.
