Cauliflower Pizza Crust
A great low-carb alternative to a traditional pizza crust!
1 cup shredded cauliflower
1 cup shredded mozzarella cheese
1 egg
Italian seasonings such as oregano, basil, fennel seed etc.
Shred cauliflower and put in a microwave safe container, add a tablespoon of water and microwave for about 6 minutes. It should feel almost like the consistency of cooked rice.
(Alternatively you could use a cup of the "Cauli-Rice” recipe in place of the step above)
Add shredded cheese and a beaten egg and mix well. Sprinkle with herbs of your choice. Spread very thinly on a cookie sheet lined with parchment paper.
Bake in a pre-heated oven at 450 degrees for 15 – 20 minutes. It should be golden brown.
While it is in the oven, pre-cook any veggies or meat that you want to put on your pizza. When it comes out of the oven, spread with tomato sauce, meat, veggies and cheese and broil until cheese is melted.
