Versatile soup recipe

The following basic soup recipe falls under the free foods category.

Spray a pan with Pam and lightly sauté the following ingredients for 8 minutes:
500g (2 cups) sliced carrots
750g (4 cups) diced onions
4 large sliced celery stalks
2 large crushed garlic cloves

Put the following ingredients in to the pan and heat to boiling. Reduce and simmer for 10 minutes:
1.5l (56oz) canned diced tomatoes
500g (6 cups) grated cabbage
350g (3/4 lb) trimmed green beans
1.5l (48oz) chicken stock
1.5l (6 cups) water

Put the following ingredients in to the pan and heat to boiling. Reduce and simmer for 10 minutes:
3 medium (1lb) cubed zucchini
350g (12oz) spinach

This soup keeps very well and can be frozen in individual portions and then changed with the addition of a few simple ingredients.

MEXICAN CHICKEN SOUP

When the following ingredients are added to the basic soup recipe, this soup counts as 3 protein.

Take 500ml (2 cups) Basic Soup, heat to boiling and add:
85g (3oz) cubed chicken breast
80 ml (1/3 cup) corn kernels
1 ml (1/4 tsp) ground cumin
Reduce and simmer for 3 minutes.

Add 15 ml (1 tbsp) fresh cilantro and a lime wedge and serve.

THAI SHRIMP SOUP

When the following ingredients are added to the basic soup recipe, this soup counts as 3 protein.

Take 500ml (2 cups) Basic Soup, heat to boiling and add 110g (4oz) cleaned shrimp, 12 halved snow peas and a pinch of ground red pepper.
Add the following ingredients and serve:
60ml (1/4 cup) light coconut milk
3ml (1/2 tsp) fresh grated lime peel
10ml (2 tsp) fresh lime juice

GOULASH

When the following ingredients are added to the basic soup recipe, this soup counts as 3 protein.

Thoroughly cook 110g ground turkey breast, then add 3ml (1/2 tsp) paprika and a pinch of caraway seeds. Add 500ml (2 cups) Basic Soup, heat to boiling then reduce and simmer for 5 minutes. Add 30ml (2 tbsp) no-fat sour cream and serve.
