Spinach with Crispy Proscuitto

Crispy proscuitto is an excellent addition to wilted spinach!

1 bag of triple-washed baby spinach
6 thin slices of prosciutto
1 tablespoon extra virgin olive oil
1 clove of garlic, crushed
Salt and pepper

Place the oven rack in the center of the oven and preheat the broiler. Cover a cookie sheet with foil and lay out the prosciutto flat on the sheet. Broil the prosciutto 2-3 minutes on each side. It will continue to crisp as it cools.

In a large saucepan or skillet, heat the extra virgin olive oil over with the crushed clove of garlic over medium heat. Cook 1 minute and then remove the garlic. Add spinach and wilt into the skillet. Season greens with salt and pepper. Using tongs, remove the spinach to a bowl or serving dish. Break up the crispy prosciutto over the top and serve.

Makes 4 servings.
