Chicken with Twenty Cloves of Garlic

A super easy and very flavourful way to prepare chicken!

Ingredients

4 small boneless, skinless chicken breast halves (about 1 lb. total)
20 cloves garlic, peeled
3/4 cup fat-free reduced-sodium chicken broth
1/4 cup Light Caesar Dressing
1/4 cup Grated Parmesan Cheese

Cooking Directions

Heat large nonstick skillet on medium-high heat. Add chicken and garlic; cook 4 min., turning chicken after 2 min.

Stir in broth and dressing; cover skillet with lid. Cook chicken 3 to 5 min. on each side or until done (165ºF).

Sprinkle chicken with Parmesan; cover. Remove from heat. Let stand 1 min.

Once the cheese has melted, remove the chicken. Return frying pan containing sauce to heat, and bring to a boil until the sauce has reduced and thickened.

Pour remaining sauce over chicken and serve.

Makes 4 servings

Count each serving as 3 proteins

Tip: If you are halving this recipe for 2 people, do not alter dressing and broth amount, but divide the chicken and garlic amounts in half.
