Cabbage Roll Stir-fry
This recipe is just as comforting and delicious as regular cabbage rolls, but takes much less time to prepare!
Ingredients
1 large onion
1lb ground pork or beef
28-oz can plum tomatoes, drained and coarsely chopped
1 ½-oz cans tomato sauce
1 tbsp brown sugar (or brown sugar Splenda)
2 tbsp vinegar
1 tsp. each dried oregano and thyme leaves
Salt and pepper
1 green pepper
454-g pkg coleslaw mix or ½ a cabbage
Cooking Instructions
Spray a large saucepan with Pam and place over medium-high heat.
Add onion and crumble in pork or beef. Stir frequently to keep meat crumbly until it's almost cooked through, 3 to 4 minutes. Add the tomatoes, tomato sauce, vinegar and seasonings. Stir often until flavour develops, about 5 minutes.
Meanwhile, slice green pepper into thin strips. If using cabbage, thinly slice. Add pepper, cabbage or coleslaw mix to pan and stir often, uncovered until cabbage is tender, 4 to 5 minutes. Taste and add salt if needed.
