Spinach and Cranberry Salad

With a variety of different flavours, this salad has a deliciously distinctive taste!

Ingredients

8 ounces (250 mL) fresh spinach
1/2 cup (125 mL) feta or goat cheese, crumbled
1/4 small red onion, thinly sliced
1/2 cup (125 mL) sweetened, dried cranberries (i.e. Craisins)
2 tbsp (30 mL) toasted sliced almonds

Dressing:

1/2 cup (125 mL) bottled balsamic vinaigrette salad dressing
2 tbsp (30 mL) orange juice
1 tsp (5 mL) orange zest, optional

Instructions

Wash spinach and tear into pieces into a serving bowl.
Add cheese and onion; toss to combine.
Blend dressing ingredients in a small mixing bowl. Pour over salad and toss to coat.
Top with sweetened dried cranberries and almonds

Notes
