Chicken Breast with Orange Glaze
The orange glaze give the chicken delicious flavour!
Ingredients
1 tbsp butter or margarine
4 boneless, skinless chicken breasts
1 tsp cornstarch
½ tsp ground mustard
½ cup orange juice
¼ cup orange marmalade (i.e. Smuckers no sugar added)
2 tbsp soy sauce (* Citrus-seasoned soy sauce is good too)
Instructions
1. Melt butter in skillet on medium heat. Cook chicken about 15 minutes turning once until no longer pink.
2. Mix cornstarch and mustard in small bowl. Stir in remaining ingredients. Discard juices in pan.
3. To make glaze, pour orange mixture in pan. Heat to boiling over medium heat, stirring constantly. Boil one minute; add chicken and simmer 5 minutes. Serve.
Notes
Makes 4 servings.
